Wrap with Grilled Norwegian Salmon and Guacamole

A simple way to serve grilled Norwegian salmon is in a wrap. In this recipe the salmon is accompanied with homemade guacamole, cucumber and bell pepper.

Ingredients

400gNorwegian salmon fillet, skinned and deboned
2tsprapeseed oil
salt and pepper
grill foil

Guacamole

2avocadoes
0.5lime
1chili pepper, red
1tsptaco seasoning
0.5tspsalt

Serve with

0.5cucumber, fresh
1bell pepper, sweet
4tortilla wrap

Preparation

  • Heat the grill. Cut the salmon in long even pieces.
  • Fold a sheet grill foil double and grease with oil.
  • Season the salmon with salt and pepper, and place on the grill foil.
  • Place the foil on the grill and grill the salmon for 1 minute, turn and grill 1 minute on the other side.

Guacamole

  • Cut avocado in two, remove the stone and avocado meat with a spoon.
  • Juice the lime. Cut chili across, remove seeds and finely chop.
  • Mash the avocado meat with a fork and mix with lime juice, chili, taco spice and salt.

To serve

  • Cut cucumber and bell pepper in long, thin strips.
  • Have some guacamole on the middle of each wrap and place strips og cucumber, bell pepper and salmon over.
  • Fold and roll together, and serve.
