Norwegian saithe with red chilli and apple cider vineger

Method

  • Preheat the oven to 200º/400ºF/gas 6.  
  • Cut the saithe in loins of 250 g. 
  • Grease a baking tray with a little olive oil and keep to one side. 
  • Sauté the fish with the skin facing up in a hot frying pan with a little olive oil. 
  • Place the fish skin down on the tray.
  • Add a pinch of black pepper, and a pinch of salt.
  • Repeat the process with the rest of the saithe.  
  • Bake in the pre-heated oven for 8 to 10 minutes. 
  • Slice the garlic.
  • Remove the seeds from the red chillies, and slice the chillies. 
  • Sauté the garlic in a frying pan with a little olive oil until brown. Add the chilli.
  • When the garlic is golden but not burnt, remove from the heat and add the cider vinegar and the juices of the fish that are in the oven tray.
  • Stir well and cover the saithe loins with this sauce. 

Decorate with the chopped parsley and serve.
