Baked Skrei with Tomato and Garlic

Baked Skrei with Mediterranean flavours of garlic and tomato is a tasty and easy dish to serve to family or friends.

Preparation

  • Preheat the oven to 200 °C.
  • Dice onion, cut tomato into slices and finely chop garlic and chili.
  • Sauté onion and garlic in a little olive oil until the onion is golden.
  • Add chili and tomato purée, and let simmer with the onion.
  • Pour in white wine and taste the sauce with sugar, salt and pepper.
  • Place the Skrei and tomato slices in an ovenproof dish.
  • Cover the fish with the sauce and drizzle with olive oil.
  • Bake in the oven for approx. 20 minutes.
  • Serve with bread on the side.
