Preheat the oven to 200 °C.
Cut the halibut in servings and place on a baking tray with baking paper.
Finely chop anchovy and mix with room temperature butter, breadcrumbs and grated cheese to an even mix.
Spread the mix over the halibut and bake in the oven for approx. 20 minutes. The core temperature should be 52 °C.
Thinly slice red onion, cut cherry tomato in half and tear the salad.
Dice bread and toss in olive oil and chopped dill.
Pan-fry the bread crispy and golden.
Combine red onion, cherry tomato, salad and bread.
Combine egg yolk, mustard, anchovy and garlic in a food processor to an even mass.
Add soy oil a little at a time while the machine is running. It should start thickening.
Stir in crème fraîche.
Serve baked halibut with salad and dressing.
