Toast with Smoked Norwegian Salmon, Lettuce and Watercress

This is a nice and healthy way to serve smoked Norwegian salmon. Lettuce, watercress and mustard is perfect on toast with the salmon.

  • Cut the salmon into thin slices.

  • Chop lettuce, watercress and spring onion.

  • Combine olive oil and mustard and mix with the lettuce, watercress and spring onion.

  • Toast the bread and cover with a layer of the lettuce mix.

Cover with a slice of smoked salmon and serve. Garnish with watercress leaves.
